“The new dishes are prepared with great care, in order to satisfy domestic and foreign guests. I believe that the menu should be diverse and, above all, original. If you cannot find the right ingredients, it should not be made. To be clear, if hummus is made with tahini paste, then it is necessary to use that paste, not a substitute. Also, chickpeas should be cooked and not canned. Therefore, for the story to be successful, the right products are needed”, explains our Chef.
Stefan says that guests will be able to try some new Arabic and French dishes. The accent will be on Morocco cuisine, where he spent most of his time in the previous three years.
“I always make sure I have two cooking techniques on my plate. Such is the case with pork, which contains not only a grilled cutlet, but also a ‘bajadera’ made from that meat, which is cooked for 24 hours, after which it is chopped, we add spices, dried and stone fruits. So, it is not a meat prepared in a classic way. In addition, we will have great homemade hummus with veal, Mutabal salad, exotic Couscous salad with citrus fruits, as well as some interesting main meat dishes”, says our Stefan, who always first creates meals in his head, which are truly a feast for the eyes.
With cooking he combined his old desire to paint, so now Stefan creates works of art on plates. It will certainly continue, because he announces special meals for every month in 2023, which you can try starting from January at The Living Room.
